What is sourdough?

Sourdough is created using a starter leavened by probiotic lactobacilli and natural wild yeasts in the flour. This process generates lactic acid, which ferments the dough and creates a unique taste with a hint of sourness. Sourdough requires a fermentation process lasting 36-48 hours, but it is well worth the wait as the flavor is incomparable. The contrast between the crispy, golden crust and light, airy dough is impressive. If there were a truly healthy pizza, it would be sourdough pizza—easier to digest and rich in essential nutrients like iron and magnesium.
